Pumpkin Fun

Pumpkin is a “super-food” that packs in almost 300% of the day’s
recommendations for vitamin A in just one ½ cup serving.  This time of
year, pumpkins are most often used as Jack O Lanterns or fall décor but
the real treat is that pumpkins of almost any size can be transformed
into a dish that can fit into any meal and “wow” your guests!  Hy-Vee
Registered Dietitian, Alicia Aguiar, will show your audience some great
ways to use pumpkins and add elegance to any table.

Pumpkin preparation tips:   (in the conventional oven or microwave)
·         Wash the outside of the pumpkin prior to carving
·         Use a sharp, sturdy chef’s knife to carefully carve the “lid” or top of the pumpkin
·         Carefully scoop out the seeds and strands with a spoon or pumpkin scoop
·         Replace the lid when roasting with or without the filling to steam the pumpkin inside – see recipe below.

Filling ideas for roasted pumpkins:
·         Oatmeal served with cinnamon, pecans and apples
·         Applesauce served with cinnamon and nutmeg, topped with pumpkin granola
·         Pumpkin soup topped with roasted, seasoned pumpkin seeds
·         Savory bread pudding with toasted nuts and apples
·         Winter fruit compote topped with whipped cream
